wrap each green tomato in newspaper, and put in brown bag. I live in Nova Sucks, had tomato plants survive to Nov (that is another story), wrap them like this, and had my ripe tomatoes during my xmas. Tasted okay, and better than at the stores at the time.
Otherwise, fried green tomatoes, which I am not a big fan of, but others love them.
