I have tons of green maters still on the vine, and the vines themselves are giving up the ship. Need some good ways to use these things. Alternately, anyone have any success ripening green tomatoes that were picked well before their time?

Fried Grean Tomatos, (either Corn meal breading or tempura battered)
Havarti Cheese
Green Leaf Lettuce
Roasted red pepper Mayo.
